meet the pitmasters

Rob has been competing for 7 years on the Florida BBQ and KCBS Circuit. Rum Runners BBQ team was founded in 2017 after spending a couple years in backyard with another team. Since then, we have won multiple top 10 awards. He is member of the FBA, KCBS, and the SCA. He is also a member of the World Championship Shed BBQ and Blues Joint team out of Ocean Springs, MS, where they won Memphis in May in 2018.
Amy has been competing with Rob for the past 5 years and just within the last couple of years she has started to really get into her competition cooking career. She is a member of the FBA and competes in the SCA. She is also a member of the World Championship Shed BBQ and Blues Joint team out of Ocean Springs, MS, where they won Memphis in May in 2018. Just recently she competed in the Fire Woman Competition at the World Food Championship and took 3rd place.
Brady is 12 years old and has been cooking since he was 6 years old. He has won several contests and is currently 5 th in the world for Burger at the American Royal World Championships. When he is not competing, he likes to play Fortnite with his friends.

Honey Sriracha Wings

Season the wings with your favorite savory rub (Captain’s Choice). Bring the grill temperature to 300 degrees. I like to cook my wings with indirect so I use a deflector in my grill. I cook my wings until they reach 195 degrees internal temp.
INGREDIENTS:
Melt the butter first and then combine all ingredients into a sauce pan. Heat sauce and stir with a whisk or spoon until it starts to bubble. At that point you can pull it off the burner. Once your wings are done, just drizzle, sprinkle sesame seeds over the wings and serve.

St. Louis Spare Ribs

Season the wings with your favorite savory rub (Captain’s Choice). Bring the grill temperature to 300 degrees. I like to cook my wings with indirect so I use a deflector in my grill. I cook my wings until they reach 195 degrees internal temp.
INGREDIENTS:
Heat grill to 250 degrees and cook until desired color. Once you achieve your desired color it’s time to wrap. Lay out two sheets of foil per rack, put down your brown sugar, slices of butter (3-4), honey or BBQ sauce or agave, and then fold up the sides to pour a little juice in, then wrap them up. Allow them to cook until they feel tender with a toothpick or with a meat probe. Add a little bit of rub Sauce them up and lightly sauce or serve them as dry ribs. Cook time is roughly 3 hours. Longer if you like that fall off the bone rib.
